German salad with hot bacon dressing

This salad is very, very caloric, so it makes more of a meal than a side dish.

It has to be made fresh, as the dressing doesn't hold. The recipe as given makes 6 dinner-sized servings or 12 side-dish servings.

Most people seem to like it sweeter than this, but I don't have a sweet tooth when it comes to salad. I use just enough sugar to counteract the vinegar.

ingredients

  • 1 head romaine, torn
  • 1/2 large red onio, sliced thinly
  • 2 tomatoes, cut into wedges
  • 1 cucumber, peeled and sliced
  • 1/2 quart alfalfa sprouts
  • 1 lb bacon
  • 8 hard boiled eggs, chopped
  • 1/2 cup apple cider vinegar
  • 1/2 cup mayonnaise
  • 3 TB sugar

method

  1. Toss romaine, onion, tomatoes, cucumber and sporuts in a large bowl. Refrigerate.
  2. Cook bacon, remove to paper towels to drain. Allow to cool slightly, then crumble.
  3. Mix bacon grease, eggs, apple cider vinegar, mayo and sugar to make dressing.
  4. Toss hot dressing with salad. Top with bacon crumbles.
